No, the default browser can most certainly be changed from Edge to any browser that is installed on your machine. In fact, I would dare say that updating from the May update to the October update will likely keep your default browser as is.

Hello everyone,

Welcome to Windows 10 October 2020 Update (Version 20H2/build 19042) era. With the release of build 19042.508 to release preview channel, we have now entered 20H2 era. Instructions will remain the same, as 20H2 is Version 2004 with features added on top, the most important of which is Chromium Edge being the default browser from now on.

As for calling it “five minutes”, it has to do with the way October 2020 Update will be distributed and installed: it is another enablement package just like 1903 to 1909 upgrade route.
